Maria Antoinette said let them eat cake, so who says you can’t indulge on whip cream?! This playful mocktail or spiked bourbon foam is a fun little treat to serve for dessert at your next dinner party.
- 1 oz peach puree
- 1-2 oz decocted and cooled blue butterfly pea flower
- 8 oz 1 day Oak Bottle Mini aged heavy whipping cream or raw cream
- 1 oz rose water
- 2 oz bourbon optional
- Handful of ice
After cream has been aged in refrigerator for 1 day, pour into a glass jar. Add butterfly pea flower, seal with lid and shake vigorously until you no longer hear liquid. Look to see if a light blue hue forms. If not, add more butterfly pea flower gradually and continue shaking until hue is achieved. Set aside.
In chilled coupe glasses, divide rose water and swirl in glass.
To each glass add 1 T of peach puree.
Add optional bourbon at this point.
